Chicken Tortilla Soup

This is one of my favorite soups and it makes soooo much! So it's good for a group or lots of leftovers.

Ingredients: Olive oil
                 1 onion
                1 T.  garlic ( I use the minced kind that comes in the jar)
                1 fresh jalapeno (optional)
                1 green pepper
                Pkg. of chicken breasts ( I use 3 pieces)
                small pkg. of frozen corn (about 2-3 cups)
               1/2 cup water
                1 tsp. cumin
                1 tsp. chilli powder
               1/4 tsp. cayenne pepper (only if you like it spicy!!) and even if you don't use this it will have a little bite with the cumin, chilli powder and jalapeno.
              Chicken broth ( I use about 56 ounces)
                2 (14oz.) cans of diced tomatoes
               2 (8oz.) cans of tomato sauce
              tortilla chips
               shredded cheese





Directions:
         Saute the onion, garlic, jalapeno, green pepper with olive oil in LARGE pot until it's kinda soft. Then just add all the rest of the ingredients. Even the chicken. Put it in there raw (after you cut the fat off) and bring to a boil. Remove the chicken when it's fully cooked (about 15 minutes) and shred it into pieces. Add it back to the soup and it's done! :) Top with lots of crunched up chips and shredded cheese. :)

Yum O Tuna Melts

This is a quick and easy twist on a tuna melt. You could also substitute chicken if you are not into tuna. They also make for great leftovers. :)


 Ingredients: 1 large can of refridge. biscuits (I get the wheat ones)
                     1 egg yolk
                    1/3 cup mayo
                    salt and pepper to taste
                    1/8 tsp. cajun seasoning
                    1 can of diced tomatoes with green chiles
                    6 oz. can of tuna
                     shredd. cheese




Directions:  Preheat oven to 350.
     Grease a cookie sheet. Put the refrigerated biscuits on pan. In a bowl beat the egg yolk, then take a baking brush and cover the tops and sides of the biscuits. Bake for about 13 minutes...or until done. While that's baking....Get a bowl and combine everything else except the cheese. Don't forget to drain the tuna! Then, when biscuits are done make an indention in them to form a little bowl. (I use an ice cream scoop!) Then, scoop the tuna mixture into each little biscuit bowl. Put shredded cheese on top and put in oven on BROIL for about 2 minutes or until it's melted on. Yum-O!!!

Red velvet w/ white choc. chip cookies

This is also a SUPER easy recipe! Ever have a box of cake mix sitting around in your pantry, but don't feel like cake?....make cookies!!
   Ingredients:     1 package of red velvet cake mix
                          1/2 cup veggie oil
                           2 eggs
                         about 1 1/2 cups of white choc. chips



Directions:  Preheat oven to 350.
       Combine the ingredients and drop onto an ungreased cookie sheet. Bake for about 8 to 10 minutes.
  * You can also substitute ANY flavor of cake mix/ toppings you like.  Chocolate cake mix with peanut butter chips is very yummy!
       

Almond Chicken

This recipe is SUPER easy and very yummy! A sweet twist on chicken. :)
   Ingredients: Chicken (boneless, skinless- I use 3 pieces)
                      3/4 cup brown sugar
                       5 oz. bag of almonds (chop them up into fine pieces)
                      1 1/2 teaspoon of garlic salt


     
Directions: Preheat oven to 400.

  Cut the fat off your chicken and set aside. In a bowl combine the brown sugar, almonds and garlic salt. Rinse chicken in water and then cover it in the mixture. Put on lightly greased sheet. Bake for about 20 to 24 minutes.
